杜綱主編的《烹飪英語(中等職業教育中餐烹飪專業繫列教材)》“實用為主，夠用為度”的原則，以中澳項目的科研成果為理念，本書著重強調將實際工作中常用的英語交流用語、專業術語、專業詞彙提供給學生訓練與記憶，同時使學生學會閱讀英語菜譜及有關食品使用說明，以便在實際工作中加以運用。

杜綱主編的《烹飪英語(中等職業教育中餐烹飪專業繫列教材)》以烹飪 常用詞彙為主線，涉及10個方面的內容，包括：蔬菜、水果、小喫、肉類、 調料、烹飪用具、烹飪手法、干果蜜餞、海鮮、飲料等，並配上相應的圖片 。全書共分10個單元，每個單元以上面其中一個方面的單詞為主，配以日常 用語及對話、重點動詞用法、英文菜譜。每個單元後都有自我評價、生詞表 。《烹飪英語(中等職業教育中餐烹飪專業繫列教材)》後附有中文菜品名譯 成英文菜品名的常用方法、酒店各部門的英文名稱及最常用禮貌用語，以方 便學生實際運用。每個單元中配有大量的練習以方便學生記憶和運用。針對 學生不同的程序及學生將來工作的需求，在一些菜譜後增加了圖片以便學生 復述，並在後兩個單元采用了兩篇商品說明。
